That gave me very “do not want” feelings. I’m not sure quite how to articulate it, but I think it was OOC. The writers have also destroyed that...

I would just like to say one thing:
This is going to be a Peter Dinklage appreciation post.
SHOCKING, I know, because I actively dislike Tyrion,...
At this point in the series (even if this isn’t entirely clear in the show) if you are still categorizing the Dothraki as a raping, uncivilised monolith and not also categorizing Westerosi as a raping, uncivilised monolith (i.e. you think that they’re somehow more civilised), you are missing something big and might need to take some time to think about why.
Keywords: Eurocentrism, ethnocentrism, colonialism, imperialism…

It just doesn’t make sense to me.
It makes actual sense in the books, when she doesn’t leave with him. Book!Sandor and tv!Sandor are two very different characters, and Sansa has to stay for her plot line in the future seasons. I can give you book spoilers, if you’d like, if that’d help at all?
I’m reading the books and already read that part but I’d have preferred if she’d gone with him…
Don’t we all? But it does make some sense—and in the end, it’s not Sansa who says no, Sandor leaves.
Sigh. I can recommend like twenty fix-it fics for that, if you’re a shipper. I don’t think there are many platonic ones out there where she goes with him, but there are a lot of shippy ones.
The other thing to consider (in the books at least, who the hell knows what they’re going to do on the show), is that Sansa and Sandor both have really important character development work that they really have to do separately before they can meet again.
(general book spoilers follow) Like, if Sansa went with Sandor, we wouldn’t get the character development about her continued disillusionment (especially regarding marriage), her increasing aptitude at playing the game, coping with the loss of her entire family, etc. And as far as Sandor goes, it’s really important that he get in touch with his guilt over Sansa (among other things) and feel the need to repent for it, which wouldn’t be as severe if she had run away with him; he could have told himself he had “saved” her, etc.
Taking the long view, I actually think it’s better for their relationship that she didn’t go with him.
